Brioche French Toast Casserole

Brioche French Toast Casserole with banana and cashews makes a delicious, hearty, and easy breakfast treat!

Ingredients

  • 10 brioche rolls cut into bite-sized pieces
  • 5 eggs large
  • 3 cups (xxg) milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon nutmeg ground
  • 1 pinch salt
  • 4 bananas
  • ¼ cup (xxg) cashews
  • 2 tablespoons maple syrup
  • 1 tablespoon Brown sugar

Instructions

  • Lightly oil a 9x13 baking dish and spread the brioche pieces evenly across the prepared dish.
  • Whisk together the eggs, milk, vanilla, nutmeg, and salt and pour over the brioche.
  • Cover and allow to rest until bread has absorbed the milk mixture for 30 minutes. You can keep this for up to a day in the fridge.
  • Preheat the oven to 350 degrees F / 180 degrees C and bake the casserole for 35 minutes.
  • Just before the 35 minutes are up, peel and slice the bananas and add them to a bowl. Mix them with the cashew nuts and maple syrup.
  • Remove the brioche casserole from the oven, and sprinkle on the maple-coated banana slices and cashews before topping with brown sugar.
  • Return to the oven and bake for an additional 10 minutes, or until the bananas and cashews are caramelized.

Notes

    • Keep in mind that if you've chilled the dish overnight, it's best to allow it to reach room temperature before baking.
    • Also, note that the casserole may puff up in the oven but will settle after resting for a few minutes.
    • Sprinkle with a dusting of powdered sugar just before serving.
    • Storage - keep leftovers in an airtight container inside the fridge for up to 4 days.
