Coconut Baked French Toast
Oven baked french toasts with coconut and vanilla.
- 450 g (1lb) white bread cut into small bits
- 500 ml (2 cups) coconut milk
- 500 ml (2 cups) milk
- 5 eggs beaten
- Vanilla sugar to taste (I used Steenbergs organic vanilla sugar)
Preheat oven to fan assisted 160C / 180C / 350F / gas 4.
Lightly grease a 12inch by 13 inch baking tray and add the bread pieces to it
Mix together the coconut milk, milk, eggs and sugar until combined.
Pour over the milk-egg mixture over the bread pieces and make sure all the pieces are evenly covered.
Bake for uncovered for 40 mins or until puffed and lightly golden.
Serve with fruits and extra maple syrup.
