Coconut Baked French Toast

Oven baked french toasts with coconut and vanilla.

  • 450 g (1lb) white bread cut into small bits
  • 500 ml (2 cups) coconut milk
  • 500 ml (2 cups) milk
  • 5 eggs beaten
  • Vanilla sugar to taste (I used Steenbergs organic vanilla sugar)


  • Preheat oven to fan assisted 160C / 180C / 350F / gas 4.
  • Lightly grease a 12inch by 13 inch baking tray and add the bread pieces to it
  • Mix together the coconut milk, milk, eggs and sugar until combined.
  • Pour over the milk-egg mixture over the bread pieces and make sure all the pieces are evenly covered.
  • Bake for uncovered for 40 mins or until puffed and lightly golden.
  • Serve with fruits and extra maple syrup.
