Chipotle Black Bean Burgers - Egg Free

Ingredients
For the black bean burgers:

g
(3 oz) oats
1/2
red
bell pepper sliced
1
red onion sliced
1 to
mato sliced
1
tsp
smoked chipotle paste
1/2
tsp
salt

tsp
ground cumin
2
handfuls chopped coriander
cilantro
450
g
(1lb) cooked black beans
1
handful of chopped roasted cashews
optional
Oil
for frying
For Serving

Toppings such as red onions
salad, tomatoes, chipotle ketchup etc
Instructions
Blend all the burger ingredients excluding the beans and cashews.
Then add in beans and process to the coarseness you prefer.
Add in the cashews if using and then mould into burger shapes - they will be a little wet.
Freeze the shaped burgers for a couple of hrs.
Heat the frying pan with a dribble of oil.
Then fry on low heat for about 5-7 mins.
Flip and cook on the other side on medium heat until cooked (5-7)
Serve with onions, salad green, tomatoes, burger sauces and sweet potato fries.
Notes
Add more chipotle ketchup or chipotle sauce as necessary when making the burger.
