Citrus Salad

Gorgeous salad with a whole load of citrus on a bed of red cabbage and mint sprinkled on top.

Ingredients

  • 1 ruby red grapefruit
  • 1 blood orange
  • 1 orange
  • 1 tangerine
  • ΒΌ of a head of a small red cabbage
  • 1 tbsp of chopped mint

Instructions

  • Chop red cabbage and layer it in a salad bowl
  • Peel citrus fruit removing as much of the pith as possible.
  • Chop or slice fruit into your preferred size.
  • OH has asked me to add in here that he thinks small fruit and cabbage chunks are much better than large round slices. Try it and see.
  • Layer fruit on top of cabbage and sprinkle chopped mint on top.
  • Drizzle with salad dressing of your choice.
