Gorgeous salad with a whole load of citrus on a bed of red cabbage and mint sprinkled on top.
- 1 ruby red grapefruit
- 1 blood orange
- 1 orange
- 1 tangerine
- ¼ of a head of a small red cabbage
- 1 tbsp of chopped mint
Chop red cabbage and layer it in a salad bowl
Peel citrus fruit removing as much of the pith as possible.
Chop or slice fruit into your preferred size.
OH has asked me to add in here that he thinks small fruit and cabbage chunks are much better than large round slices. Try it and see.
Layer fruit on top of cabbage and sprinkle chopped mint on top.
Drizzle with salad dressing of your choice.
