Mix together orange juice, lemon juice, vanilla, ginger and ground cardamom.
Mix in the sugar followed by the grated beetroot and apple
Add the beetroot relish mixture into a pot and cover.
After 20 min, open the lid and let the relish cook till finished mixing regularly.

If you want this Beetroot Relish to be a little sharper then feel free to add a little less sugar and a little bit more lemon.Whilst I call this a beetroot relish, it actually doubles up as a beetroot jam also. Feel free to add more warming jam type spices to this recipe instead.
