Ingredients

  • 150 ml orange juice
  • Juice of 2 lemons
  • 1 tsp vanilla essence
  • 0.5 tsp ground ginger
  • 0.5 tsp ground cardamom
  • 550 g sugar
  • 600 g grated beetroot
  • 1 apple peeled and finely diced
  • 550 g sugar

Instructions

  • Mix together orange juice, lemon juice, vanilla, ginger and ground cardamom.
  • Mix in the sugar followed by the grated beetroot and apple
  • Add the beetroot relish mixture into a pot and cover.
  • After 20 min, open the lid and let the relish cook till finished mixing regularly.

Notes

If you want this Beetroot Relish to be a little sharper then feel free to add a little less sugar and a little bit more lemon.
Whilst I call this a beetroot relish, it actually doubles up as a beetroot jam also. Feel free to add more warming jam type spices to this recipe instead.
