Cheesy Quinoa Porridge with Grana Padano and Prosciutto di San Daniele {Gluten Free}
Cheesy Quinoa Porridge is an easy one-pot meal that is rich in flavour.

- 1 tbsp olive oil
- 1 garlic clove minced
- 2 spring onions (scallions) finely sliced
- 180 g quinoa rinsed
- 10 cherry tomatoes halved
- 1 small cheese rind I used Grana Padano
- 475 ml chicken stock
- 50 g shredded Grana Padano
- Handful of chopped parsley
- 4 slices of Prosciutto di San Daniele torn into bits
Heat the olive oil in a pot over medium heat.
Add the spring onions and garlic and cook, for 1 minute.
The add in the quinoa, tomatoes, cheese rind and chicken stock, stir well and cover.
Bring to the boil, reduce to a simmer, cover and let cook for 15 mins.
Switch off the heat and stir in the grated cheese and parsley.
Top with the torn ham and serve.
