Ingredients

  • ½ tablespoon oil
  • 1 pound (454g) lean ground beef
  • 32 ounces (907g) frozen tater tots 1 bag
  • ¾ cup (190g) Greek yogurt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup (90g) frozen corn
  • ½ cup (75g) frozen peas
  • 1 ½ cups (150g) grated cheddar cheese divided
  • 2 slices bacon extra crispy and crumbled
  • 1 cup (25g) corn flakes crushed

Instructions

  • Preheat oven to 400 degrees F / 205 degrees C.
  • Grease a deep dish casserole pan with spray.
  • On medium high, heat oil.
  • Add the ground beef and cook until no longer pink. Drain the fat.
  • Add greek yogurt, onion powder, garlic powder, salt, pepper and mix well.
  • Pour beef mixture into the casserole dish and spread evenly throughout the pan.
  • Add the frozen corn and peas on top.
  • Sprinkle on 1 cup of cheddar cheese, then place the tater tots on top.
  • Top with the remaining ½ cup of cheddar cheese, bacon, and corn flakes.
  • Bake for 30 minutes.

Notes

    • Be sure to use a deep casserole dish because each layer of this casserole is pretty substantial.
    • Use the oil or cooking spray to grease the casserole dish. This will prevent the casserole from sticking to the sides and make for easier serving.
    • When cooking the bacon, make it extra crispy. Crispy bacon not only adds flavor but also provides a satisfying crunch to the dish.
    • Ensure the ground beef is fully cooked and nicely browned before assembling the casserole. This will enhance the flavor of the dish.
    • After browning the ground beef, be sure to drain any excess fat to prevent the casserole from becoming too greasy.
    • If you're using corn flakes for the topping, crush them just before adding them to the casserole. This ensures a fresh and crispy texture.
    • Let the casserole rest for a few minutes after baking. This allows the ingredients to settle and makes it easier to slice and serve.
    • You can prepare certain components of the casserole ahead of time, like cooking the ground beef and frying the bacon. This can save time when you're ready to assemble and bake.
    • Storage - Leftover casserole can be stored in an airtight container in the fridge for up to 4 days.
