Snickerdoodle Mug Cake

Ingredients

Mug Cake:

  • 5 tablespoon (1/3 cup + 1 tablespoon) all-purpose flour
  • 2 tablespoon sugar
  • 1/4 teaspoon baking powder
  • 1/3 teaspoon ground cinnamon
  • 1/4 cup (60mL) milk at room temperature
  • 2 tablespoon salted butter melted and cooled
  • 1/2 teaspoon pure vanilla extract

Cinnamon Sugar (for layering and topping):

  • 3/4 tablespoon sugar
  • 1/3 teaspoon ground cinnamon

Instructions

  • Mix together the cinnamon and sugar for layering and set aside.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, and ground cinnamon.
  • Whisk in milk, melted butter and vanilla extract until well combined.
  • Fill the mug by alternating adding the batter, then cinnamon sugar mixture till all the batter is added then sprinkle remaining cinnamon sugar on top.
  • Microwave on HIGH for 75-90 secs.
  • Let stand for a few mins before serving. Don’t wait too long as the mug cake dries out the longer it sits.

Recipe Tips

  • As every microwave temp and time may vary, the first time you make this cake may need some adjusting with the time. As this recipe has no raw ingredients, it's safe if your cake is a little undercooked.
  • I prefer to cook my Snickerdoodle Mug Cake for the full 90 secs as it helps cook it all evenly through the mug like a full-size cake.
  • Make sure to use a big enough mug to make your dessert. You will need an 11 oz/300 ml mug or larger to make a tasty Snickerdoodle Mug Cake.
  • I also recommend putting the mug on a microwave-safe plate or napkin to catch any possible overflow of your dessert while cooking.
  • You or the kids can make this right in the mug to avoid dirtying extra dishes, especially if you use a wide mug. But some may be easier to whip all this together in a separate bowl and then transfer to your mug.
  • If you’re entertaining and want to make a Cinnamon Mug Cake for a crowd, you can double, triple or quadruple the recipe and mix in separate larger bowls. Then split and transfer to individual mugs and cook one at a time.
