Gather three small bowls. Combine the flour, salt, and chili powder in one. In another combine the egg and the buttermilk. In the last bowl, combine the panko, Franks Red Hot Buffalo Ranch seasoning, and the Italian seasoning.
Peel, de-vein and remove the tails from one pound of shrimp.
Start by coating the shrimp in the flour mixture, then dip in the egg mixture, and lastly coat with the Panko seasoning.
Add the shrimp to the skillet and cook until golden brown, for about 1-2 minutes per side, or for 3-5 minutes if fully submerged in the oil. Transfer to a plate lined with paper towels to drain.
To Cook Shrimp in Air Fryer:
Preheat the air fryer to 360F / 182C.

Shake off excess crumbs and place half of the shrimp in the air fryer basket and coat with cooking spray.
Cook about 8 minutes, until crispy and golden brown, turning once halfway through.
Remove from air fryer, set aside, and then repeat with the remaining shrimp.
To Assemble Po Boy Sandwiches:
Slice rolls or buns in half.
Spead remoulade sauce onto both halves of the bread.
Place fried shrimp onto the bottom half of the bread and then pile on the tomato, onion, jalapeños, and lettuce.
Notes
Make sure the shrimp are not touching when cooking. Work in batches to avoid overcrowding and to ensure they cook evenly.
You can swap the Franks Red Hot Buffalo Ranch seasoning for Old Bay Seasoning.
