Air Fryer Banana Bread

It's so easy to make delicious tender banana bread in the air fryer. Whipped up from pantry staples it is so easy to make that even the kids can make it unsupervised.

Ingredients

  • 3/4 cup (96g) flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt 
  • 1/4 teaspoon baking soda 
  • 2 medium-sized ripe bananas mashed
  • 2 large eggs lightly beaten 
  • 1/2 cup (100g) granulated sugar 
  • 2 tablespoons whole milk
  • 1 tablespoon plain nonfat yogurt
  • 2 tablespoons vegetable oil 
  • 1 teaspoon vanilla
  • 2 tablespoons walnuts roughly chopped

Instructions

Air Fryer Instructions:

  • Line and spray or lightly oil a 6-inch round cake pan.
  • In a large bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
  • In a separate bowl, mash the banana (I do it quickly in a blender) and then mix in the eggs, sugar, milk, yogurt, oil and vanilla extract.
  • Add wet ingredients to the dry, stirring until just combined.
  • Pour batter into prepared pan, and sprinkle chopped walnuts on top.
  • Preheat air fryer to 310F / 150C, place the pan inside the Air Fryer basket and bake for about 35 minutes or until a skewer inserted into the middle omes out clean.
  • Remove banana bread from air fryer and place on a wire rack (srill in the pan) to cool for about 20 minutes before slicing and serving,

Oven Instructions:

  • Preheat the oven to fan assisted 140C / 160C / 320F / gas 3 and prepare a 2-pound loaf pan.
  • Add all the ingredients into a bowl and mix until combined.
  • Pour the banana bread batter into the pan and smooth the top.
  • Transfer to the preheated oven and bake for 1 hour or until a skewer inserted into the banana bread comes out clean.
  • Transfer to a wire rack to cool completely before serving.

  • Ideally, you should make sure your ingredients are at room temperature before using. 
  • Do line the bottom of your cake tin with parchment paper to avoid the banana bread sticking.
  • Feel free to use overripe plantains instead.
  • Air fryer temperatures can vary depending on the make and model. I recommend starting out with less cook time, checking for doneness, and then adding more time as needed.
