Ingredients

  • 1 cup cooked sweet potato puree
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • ½ cup heavy cream
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • ¼ teaspoon ginger
  • ¼ teaspoon nutmeg
  • pinch of cloves
  • pre-made pie crust

Instructions

  • Preheat the air fryer to 300 degrees F / 179 degrees C.
  • Press the pie dough into the bottom of several 3-inch pie plates.
  • Place all of the filling ingredients in a bowl and mix until smooth and silky.
  • Divide the the filling among the pie plates and place them in the air fryer basket.
  • Bake for 15 minutes, or until pies are set and cooked through.

Notes

  • In general, I don’t cook full-sized pies in my air fryer. For this recipe, I used 3-inch pie plates. This allows me to make the best use of the size of my air fryer but also keeps me from having pies that are under or overcooked.
  • Make a batch of Instant Pot Mashed Sweet Potatoes and store the puree in 1 cup bags in the freezer so you always have some on hand.
  • Air fryer temperatures can vary depending on the make and model. I recommend starting with less cook time, checking for doneness, then adding more time as needed.
  • Storage - this sweet potato pie can be kept in the fridge for 3 days.
  • There are 9 WW Blue Plan SmartPoints in a serving.
