Using paper towels, pat pork tenderloin dry and then spray lightly with cooking spray.
Rub pork with fajita seasoning mixture, leaving 1 teaspoon for the veggies.
Spray rack and tray of air fryer with cooking spray.
Cook pork tenderloin for 8-10 minutes. Flip over and cook for another 8-10 minutes. Check for internal doneness.
Remove and place on a plate, cover with foil and allow to sit for 10 minutes.
While pork is resting, spray veggies with cooking spray and coat with the remaining seasoning mix.
Add veggies to the air fryer basket and cook for 5-8 minutes, depending on size of veggies.
Slice the pork tenderloin, toss with veggies and serve.
Notes
Cook time does not include time for the Air Fryer to preheat.
Make sure to remove the “silver skin” from the tenderloin before prepping it with spray and seasonings. To do this, just use a sharp knife to peel it away from the meat.
Allow the pork tenderloin to rest before cutting it so it retains the juices, and becomes even more flavorful.
Short on time or spices? Use a mix of paprika and cumin instead of the fajita seasoning.
