Lay out a layer of parchment paper. You may place inside a cake pan if helpful.
Set 2 ice cream sandwiches on the parchment.
Spread on a thick layer of cool whip, and then place 6 oreo cookies on top. Finish with another layer of cool whip.
Repeat the process two more times, finishing with a thicker layer of cool whip.
Garnish with crushed oreo cookies.
Place in the freezer overnight, then remove, slice, and serve.

Recipe Tips
Before assembling the cake, let the ice cream sandwiches soften just a little so you can press them down to create the layers and help form them to the pan. To make cutting slices of the cake easier, run your knife under hot water, wipe the knife dry and then slice your cake. Wiping your knife in between cuts of the cake will help it cut smoother. Don’t let this sit on your counter longer than 15 minutes before serving or it will start to melt and become runny. Thaw the Cool Whip in the fridge overnight before you plan on making the cake. Don’t thaw on the counter beforehand as it will become too runny. Use an offset spatula to help spread the Cool Whip on the sandwich layers. To crush the Oreo’s, put them in a ziplock bag and roll with a rolling pin.
