Stovetop Instructions
Add strawberries, water, and sugar into a saucepan and bring to a boil.
Reduce to a simmer, and cook for 15-20 minutes, until strawberries are mushy and the liquid is bright red.
Using a fine mesh sieve, strain the strawberries and the liquid, but don’t mash the strawberries or you will end up with a cloudy syrup. Reserve the strawberry pulp for other uses.
Let the syrup cool, then refrigerate in a jar.
Instant Pot Instructions
When cooking in the Instant Pot, reduce the water by half a cup.
Add strawberries, water, and sugar into the Instant Pot insert.
Place on the lid, turn the valve to sealing, and set to manual pressure / high pressure for 5 minutes. When done, allow for a natural pressure release.
Using a fine mesh sieve, strain the strawberries and the liquid, but don’t mash the strawberries or you will end up with a cloudy syrup. Reserve the strawberry pulp for other uses.
Let the syrup cool, then refrigerate in a jar.
To Make Strawberry Soda
Combine 1 part strawberry syrup and 2 parts sparkling water and pour over ice.
Serve and enjoy.
Notes
Use fresh or frozen strawberries.
If using frozen strawberries, use unsweetened strawberries.
When cooking in the Instant Pot reduce the water by ½ cup.
You can use less sugar for syrup that isn’t as sweet however the syrup may not get as thick.
The syrup will continue to thicken a bit as it cools.
Serve the syrup warm or cold.
Storage - keep in a jar inside the fridge for up to 2 weeks.
