Ingredients

  • 12 ounces (348g) chicken breasts two average sized boneless and skinless chicken breasts
  • ¼ teaspoon olive oil or calorie-controlled cooking spray
  • seasonings optional and of your choice

Instructions

  • Preheat the air fryer to 350 degrees F / 180 degrees C.
  • Spritz each chicken breast with a small amount of olive oil or cooking spray, and season as desired.
  • Place the chicken inside the air fryer basket, making sure there is space between the pieces.
  • Cook for 10 minutes, then turn over and cook for an additional 5 minutes.
  • Check for doneness with a meat thermometer. The internal temperature should be 165 degrees F / 74 degrees C when inserted into the thickest part of chicken breasts.
  • Let the chicken rest for 5 minutes so that the juices redistribute, then slice and serve.

Notes

  • Leave space between the chicken pieces in the air fryer. Don’t allow them to touch, and don’t stack them. Lay them in a single layer.
  • Use similar-sized pieces of chicken for even cooking times. If they are different sizes, then separate and cook similar sizes at the same time.
  • Smaller pieces of chicken will cook quickly.
  • Pre-frozen chicken is usually more even in size than fresh chicken that has been frozen and will cook more evenly. If you buy chicken to freeze, cut it to an even thickness or pound it with a meat mallet before freezing.
  • Always check for doneness with a meat thermometer.
  • Let the meat rest for 10-15 minutes on a cutting board or serving platter before slicing. You want to make sure to maintain juices in the meat so it is juicy.
  • I recommend slicing the meat thinly and against the grain.
  • Air fryer temperatures vary slightly depending on the make and model. Use the cooking time listed as a guide, check to ensure the chicken has reached the correct temperature, then adjust as needed.
  • Store - Leftover chicken breast should be eaten within 3 days.
  • There is just 1 Blue Plan SmartPoint in a serving of this (and 0 Blue Plan SmartPoints if you replace the olive oil with no-calorie cooking spray).
