Wash potatoes and slice into thin, even slices using a mandolin.
Place potatoes in a bowl and sprinkle with 1 teaspoon of salt. Fill with water to cover and let sit for 20 minutes.
Rinse potatoes and dry thoroughly with paper towels.
Place potatoes in a single layer in the air fryer basket and spray with a bit of oil.
Air fry in batches at 350F / 180C for 8-13 minutes. Turn the potatoes a couple of times during cooking so they don't burn. Watch closely as they can cook faster than expected.
Sprinkle with salt and allow to cool before serving.

Slice the potatoes as evenly as possible for even cooking.
The thinner the slices, the faster they will cook.
Be sure to wear a safety glove or use the guard when slicing potatoes on a mandolin.
Soak the potatoes in cold water for at least 20 minutes to remove excess starch.
Dry potatoes well before adding to the air fryer basket or they will steam rather than fry.
Do not crowd or overlap the potatoes.
Spray with oil before cooking. If needed spray with a bit more oil when you flip the chips.
Watch closely as the cooking time may vary based on your air fryer or how thin you sliced the potatoes.
