Air Fryer Sweet Potato Cubes are a quick, healthy side perfect for holidays and weeknights.

Ingredients

  • 2 (260g) sweet potatoes peeled and cut into 1-inch cubes
  • ¼ cup (37.5g) pecans chopped; or more to taste
  • ¼ cup (59ml) maple syrup

Instructions

  • Peel the sweet potatoes and cut them into even, bite-sized cubes.
  • If using pecan halves, chop them with a knife.
  • Add sweet potato cubes, chopped pecans, and maple syrup to a large bowl. Toss to combine until the pecans are incorporated and the sweet potatoes are well coated with the maple syrup.
  • Place in the air fryer basket in a single layer.
  • Cook at 375 degrees F / 190 degrees C for about 18 minutes, or until the potatoes are fork-tender.

Notes

  • Make sure the sweet potato cubes are well-coated before cooking. 
  • For easy clean-up, you can line the air fryer basket with foil.
  • Don’t overcrowd the air fryer. Cook in batches if necessary.
  • Toss the sweet potatoes halfway through cooking time. 
  • Serve right away to enjoy the crispy exterior.
  • Storage – keep leftovers in an airtight container inside the fridge for 3 days. They will lose their crispiness though.
