2(260g) sweet potatoespeeled and cut into 1-inch cubes
¼cup(37.5g) pecanschopped; or more to taste
¼cup(59ml) maple syrup
Instructions
Peel the sweet potatoes and cut them into even, bite-sized cubes.
If using pecan halves, chop them with a knife.
Add sweet potato cubes, chopped pecans, and maple syrup to a large bowl. Toss to combine until the pecans are incorporated and the sweet potatoes are well coated with the maple syrup.
Place in the air fryer basket in a single layer.
Cook at 375 degrees F / 190 degrees C for about 18 minutes, or until the potatoes are fork-tender.
Notes
Make sure the sweet potato cubes are well-coated before cooking.
For easy clean-up, you can line the air fryer basket with foil.
Don’t overcrowd the air fryer. Cook in batches if necessary.
Toss the sweet potatoes halfway through cooking time.
Serve right away to enjoy the crispy exterior.
Storage – keep leftovers in an airtight container inside the fridge for 3 days. They will lose their crispiness though.
