Beat together softened cream cheese, sugar, lemon juice, and vanilla in a medium sized mixing bowl using an electric mixer, until combined and smooth. You can also do this in a stand mixer.
In a separate bowl, beat the whipping cream until it forms stiff peaks.
Fold the whipped cream into the cream cheese mixture until fully combined, then add into a piping bag with your preferred nozzle. My kids prefer the star tip.
Slice strawberries in half and place on a plate. If strawberries don't sit straight, you can slice a little bit of the back to position them.
Pipe the cream cheese mixture onto the sliced strawberry halves.
Sprinkle on some shortbread crumbs or graham cracker crumbs, then serve the filled strawberries immediately.
To Make With Store-bought Ingredients

Notes
Only use the best strawberries for this - and frozen strawberries will not work for this deviled strawberries recipe.
If you prefer, you can carefully hollow out the strawberries and make a little hole for the filling to sit in. Use a small melon baller or knife.
Use large strawberries if you can, as each strawberry half is easier to handle if bigger.
To stop berries rolling around, you can slice the back of the strawberries so they sit flat on the plate.
Storage – these can be stored in the fridge for up to 2 days, but they are best fresh so we recommend making them just before serving.
