Roasted Frozen Broccoli

Crispy and caramelized broccoli florets from frozen.

Ingredients

  • 1 pound (450g) broccoli frozen
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt

Instructions

  • Preheat your oven to 350 degrees F / 180 degrees C / gas mark 4.
  • Place frozen broccoli onto a rimmed baking sheet.
  • Drizzle with olive oil and Italian seasoning. Toss to coat the frozen broccoli.
  • Place pan in the oven and roast for 20 mins turning halfway through cooking.
  • Serve.

Notes

  • Preheat both the oven and the sheet pan and place the broccoli on a hot baking sheet.
  • Line your baking sheet with parchment. This will prevent the broccoli from sticking, making it easier to turn during cooking. It also makes cleanup easy. 
  • Add a squeeze of lemon juice for a bright flavor. 
  • Add a pinch of sugar to help with the caramelization process. 
  • Don’t overcrowd the pan. The broccoli needs space, so the water from the freezing process has a chance to cook off. Spread the frozen florets to ensure the broccoli is in a single layer.
  • Broccoli not caramelizing? Set the sheet pan under the broiler for a minute or two before serving to crisp up the edged.
  • Storage - keep leftover roasted broccoli in an airtight container inside the fridge for 3 days.
