Smothered Green Beans

A family friendly green bean and bacon casserole.

Ingredients

  • 2 teaspoons vegetable oil
  • 6 small shallots or one small onion, peeled and finely sliced
  • 1 pound (450g) green beans washed and trimmed
  • garlic salt
  • 8 slices cooked bacon cut or crumbled
  • 1 cup (240ml) chicken stock

Instructions

  • Heat vegetable oil over medium heat in a large skillet. Add the shallots and sauté for a few minutes until they soften and lightly brown.
  • Add a third of the bacon and the fresh green beans to the pan and fry for 1 minute.
  • Stir in garlic salt and chicken stock, then cover with a lid and allow to simmer, occasionally stirring for 15 minutes for fork tender green beans with a little bite or for about 20 minutes for softer green beans.
  • Adjust the seasonings to taste and switch off the heat. Toss in the remaining bacon and serve.

Notes

  • Cook bacon in advance, crumble and set aside. 
  • Green beans should be washed and trimmed to remove the woody stems from the green beans. 
  • Adjust the cooking times depending on how tender you prefer your green beans. 15 minutes will make your green beans tender with just a little bite. Cook longer if you prefer softer smothered green beans.
  • Storage - keep leftovers in an airtight container inside the fridge for 4 days.
