For the mayonnaise heat the oil in a frying pan over medium heat and cook the peppers for up to 8 mins until cooked through. Wen done quickly add the salt and smokey paprika, stir and switch off the heat.
Decant the peppers into a small bowl, stir in the mayonnaise and set aside.
To make the burgers pre heat the grill to high, toast the burgers buns for about 1 min and set aside.
Reduce the grill setting to medium and grill the burgers for up to 5 mins on each side depending on how done you prefer them.
Assemble your burger starting with the bun, chunky pepper mayonnaise, burger, rocket, shredded cabbage and bun.
