Chicken Plantain Sandwich - Sierra Leone Flavours

This West African chicken and plantain sandwich with a peanut butter gravy is finger licking street food at its best

Ingredients

  • 1 plantain
  • Salt
  • Oil for frying
  • 2 sandwich rolls
  • 4 slices of cooked chicken breast

Instructions

  • Peel the plantain, cut into slices and salt them.
  • Heat the oil in a frying pan and fry plantain slices for about 2-3 mins on each side until golden brown and cooked through. You might need to do this in two batches. Set cooked plantain pieces aside on kitchen towel and store in a warm place.
  • Create the sandwiches by layering the rolls starting first with some plantain, then the chicken, then the peanut butter gravy.
