Maple tossed Rhubarb, Strawberry and Lentil Salad

Ingredients
Rhubarb strawberry lentil salad:

g (6oz)
puy lentils
1/2
a rhubarb stalk thinly sliced

small punnet of strawberries halved

feta cheese cubed

cherry tomatoes halved

radishes quartered

spring onions
(scallions) sliced

large handful of basil leaves
Maple balsamic salad dressing:

tbsp
maple syrup

tbsp
olive oil

tbsp
balsamic vinegar
Instructions
Cook the lentils according to the packet instructions, drain and set aside to cool.
Mix together all the salad ingredients.
Combine the dressing ingredients and pour over the salad.
Toss till everything is well combined and serve.
