Creamy Orange Mushroom Pasta

You will love the delicious flavor combinations in this creamy mushroom pasta.

Ingredients

  • 14 oz (400g) gluten-free spaghetti or other pasta
  • 1 tbsp olive oil
  • 1 lb (450g) mushrooms cleaned and sliced
  • 5.3 oz (150g) rocket / arugula washed
  • 4 tbsp orange juice
  • 1 cup (240ml) milk
  • 6 tbsp grated parmesan
  • salt to taste

Instructions

  • Cook gluten-free pasta according to packet instructions and set aside somewhere warm.
  • Heat the oil in a frying pan over medium heat and fry the mushrooms for about 10 mins till soft and starting to caramelise.
  • Add the arugula and fry for a min till it is softened.
  • Then quickly stir in orange juice and milk and cook over medium heat for 1 min till the liquids are well combined.
  • Switch off the heat and stir in the parmesan and season.
  • Mix in the pasta and serve immediately.

Notes

Mushroom Pasta Sauce Tips

  • Feel free to use any type of mushrooms to your preference and even a mixture of mushrooms.
  • Clean the mushrooms well before you start slicing them.
  • Make sure the mushrooms are sliced rather than halved or quartered as they cook quicker this way.
  • For maximum flavor make sure the mushrooms start to caramelize before you add the cream.
