Orange Roast Pork Fillet and Polenta Chips - Lunchbox Ideas

A quick roast orange pork fillet with polenta chips.

Ingredients

  • 450 g (1lb) pork fillet
  • Juice of half an orange
  • 2 garlic cloves minced
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt
  • Herbs to your taste (optional)

Instructions

  • Preheat the oven to fan assisted 180C / 200C / 400F / gas 6.
  • Add the pork tenderloin into a baking tray and set aside. In another bowl mix together all the other ingredients till combined and pour over the pork.
  • Roast for 20 mins and then remove the pork tenderloin from the oven and let it rest for 10 mins. Slice and serve along with the polenta chips and a sweet chilli dipping sauce.

Notes

If you can marinade the pork for about 2 hrs before roasting.
