Preheat the oven to fan assisted 180C / 200C / 400F / gas 6.
Add the pork tenderloin into a baking tray and set aside. In another bowl mix together all the other ingredients till combined and pour over the pork.
Roast for 20 mins and then remove the pork tenderloin from the oven and let it rest for 10 mins. Slice and serve along with the polenta chips and a sweet chilli dipping sauce.
Notes
If you can marinade the pork for about 2 hrs before roasting.
