Sausage Okra Sandwich - Sierra Leone Flavours

A quick alternative sandwich recipe stuffed to the brim with okra and sausages.

  • 1 tsp veg oil
  • 4 thin sausages chipolata sliced into discs
  • 100 g okra sliced into discs
  • 2 spring onions scallions sliced
  • Salt
  • Chilli flakes
  • 2 bread rolls


  • Heat the oil in the frying pan.
  • Fry the sausages for about 4 mins or until half done.
  • Add in okra and spring onions and fry for about 3 mins stirring a few times whilst frying.
  • When the okra is cooked through season the mixture with salt and chilli.
  • Slather some mayonnaise and sweet chilli sauce into your bread rolls and stuff them full of the okra sausage mix.
