Sausage Okra Sandwich - Sierra Leone Flavours
A quick alternative sandwich recipe stuffed to the brim with okra and sausages.

- 1 tsp veg oil
- 4 thin sausages chipolata sliced into discs
- 100 g okra sliced into discs
- 2 spring onions scallions sliced
- Salt
- Chilli flakes
- 2 bread rolls
Heat the oil in the frying pan.
Fry the sausages for about 4 mins or until half done.
Add in okra and spring onions and fry for about 3 mins stirring a few times whilst frying.
When the okra is cooked through season the mixture with salt and chilli.
Slather some mayonnaise and sweet chilli sauce into your bread rolls and stuff them full of the okra sausage mix.
