Smoked Mackerel, Broccoli and Plantain Stir-fry - Sierra Leone Flavours

A super easy smoked mackerel, broccoli and plantain stir-fry.

Ingredients

For the stir-fry sauce

  • 4 tbsp oyster sauce
  • 2 tbsp Tamari soy sauce
  • 1 tsp roasted sesame oil

For the stir-fry

  • 1 plantain
  • Oil for frying
  • 250 g (9oz) broccoli cut into even sized florets
  • 200 g (7oz) smoked mackerel shredded
  • 2 spring onions scallions sliced
  • Rice and toasted sesame seeds to serve

Instructions

  • Mix the ingredients of the stir fry sauce together and set aside.
  • Peel the plantain and cut into slices.
  • Heat the oil in a frying pan and fry the plantain slices for about 2-3 mins on each side until golden brown and cooked through. You might need to do this in two batches.
  • Whilst the plantain slices are cooking steam the broccoli for about 7 mins or until you get the softness you desire and set aside.
  • Heat a tsp of oil in the wok and add the spring onions and stir fry for a min.
  • Then add in as much of the stir-fry sauce as you like, cook for a min before adding in the fried plantain, broccoli and smoked mackerel and stir fry for another min.
  • Serve warm with some rice and toasted sesame seeds.

Notes

For vegans ignore fish and add more plantain.[br]Feel free to make up more stir-fry sauce to your preference.
