Ingredients

Whipped cream to top
Instructions
Crush the Oreos in a food blender (or by hand) until they resemble bread crumbs.
keep back 1 tbsp of Oreo crumbs and divide the rest evenly into 6 glass jars to form the base and set aside.
Mash the strawberries in a small bowl and mix in the sugar, lemon juice and vanilla extract.
Decant the cream cheese in to another bowl and whisk with an electric hand whisk until it is smooth and fluffy.
Whisk in the strawberry mixture until everything is well combined.
Divide the cheesecake mix evenly onto the already prepared Oreo bases.
Refrigerate for a minimum of 1 hr.
Top with the whipped cream and a sprinkle of oreo crumbs.
Notes
You can add in more sugar if you prefer. For more generous servings, split this cheesecake recipe into 4 portions.
