Ingredients

  • 8 gluten free brioche rolls torn into small pieces I used Schar
  • 3 eggs
  • 180 ml milk
  • 120 ml double cream
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence

For the Cashew Streusel Topping

  • 140 g cashews roughly chopped
  • 75 g seeds
  • 50 g oats gluten free
  • 4 tbsp maple syrup
  • 1 tsp cinnamon

Instructions

  • Preheat the oven to fan assisted 160C / 180 C / 350F / gas 4 and oil a 12-cup muffin tray.

Make the brioche muffins

  • Fill each muffin cup with the brioche roll pieces.
  • In a large bowl whisk together the eggs, milk, cream, maple syrup and vanilla.
  • Add 3 tbsp of the milk mixture into each muffin cup.

Make the cashew streusel topping

  • Make the cashew streusel topping by mixing all the ingredients together in a bowl and diving the topping evenly over the muffins.

Bake the muffins

  • Bake the muffins in the preheated oven for 20-25 mins or until golden and puffed up.
