- 8 gluten free brioche rolls torn into small pieces I used Schar
- 3 eggs
- 180 ml milk
- 120 ml double cream
- 2 tbsp maple syrup
- 1 tsp vanilla essence
For the Cashew Streusel Topping
- 140 g cashews roughly chopped
- 75 g seeds
- 50 g oats gluten free
- 4 tbsp maple syrup
- 1 tsp cinnamon
Make the brioche muffins
Fill each muffin cup with the brioche roll pieces.
In a large bowl whisk together the eggs, milk, cream, maple syrup and vanilla.
Add 3 tbsp of the milk mixture into each muffin cup.
Make the cashew streusel topping
