Instant Pot Mashed Sweet Potatoes

Instant Pot Mashed Sweet Potatoes are an easy to make side dish that is full of flavor!

Ingredients

  • 2 lbs (907g) sweet potatoes peeled and cut into 2 inch cubes
  • 1 cup (237 ml) water
  • 1 tsp ground cinnamon
  • 2 tbsp dairy free butter
  • 2 tbsp maple syrup
  • salt to taste

Instructions

  • Wash, peel and quarter sweet potatoes. But, if you prefer you can skip peeling them.
  • Add 1 cup of water into the Instant Pot insert, making sure it does not pass the fill line.
  • Place the potatoes inside the insert, cover your Instant Pot and set the valve to the SEALING position.
  • Select the Pressure Cook or Manual button (dependent upon IP model), select high pressure and set the timer to 14 minutes.
  • Cook till done, then perform a complete quick pressure release.
  • Carefully open the lid and remove the sweet potatoes from the Instant Pot. Make sure to drain off the cooking water.
  • Place sweet potatoes in a large bowl and add the rest of the ingredients before mashing.
  • Serve your Instant Pot Mashed Sweet Potatoes warm.

Notes

 
  • You don’t need to peel your sweet potatoes. You can just cut them up and add in. Try it both ways and see what you prefer.
  • Make sure to scrub the sweet potatoes clean, as you don’t want to be tucking into gritty potatoes.
  • I prefer to cook the sweet potatoes directly in the insert to avoid washing up, but feel free to cook them on a trivet if you prefer.
  • You'll need to drain the cooking water from the sweet potatoes before mashing.
