Set ice cream out to soften and preheat your waffle iron.
In a large mixing bowl, stir together flour, sugar, baking powder, and salt.
Pour in the buttermilk, eggs, vanilla extract, and melted butter into the dry ingredients bowl. Stir until well combined.
Add one portion of the batter into the preheated waffle iron and cook according to the waffle iron manufacturer's directions.
When the waffles are cool, then spread ice cream onto one side of the waffle and place the other waffle on top.
Coat the sides of each ice cream sandwich with colorful sprinkles, then place in freezer for 3-4 hours.
To serve, cut the sandwiches lengthwise and enjoy!
