Ingredients

For Waffle Ice Cream Sandwich Recipe:

  • 2 cups (300g) vanilla ice cream
  • ¼ cup (34g) colored sprinkles
  • 8 frozen waffles

For Homemade Buttermilk Waffles:

  • 2 cups (272g) all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 ¾ cups (420g) buttermilk
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ½ cup (113g) butter, melted

Instructions

To Make Waffle Ice Cream Sandwich Recipe:

  • Set ice cream out for 20 minutes to allow it to thaw a bit.
  • Spread ice cream onto one side of the waffle and place the other waffle on top.
  • Coat the sides of each sandwich with colorful sprinkles.
  • Freeze for 3-4 hours.
  • When you are ready to serve, cut sandwiches lengthwise and enjoy!

To Make Buttermilk Waffles:

  • Preheat your waffle iron.
  • In a large mixing bowl, stir together flour, sugar, baking powder, and salt.
  • Pour in the buttermilk, eggs, vanilla extract, and melted butter into the dry ingredients bowl. Stir until well combined.
  • Add one portion of the batter into the preheated waffle iron and cook according to the waffle iron manufacturer's directions.
  • When the waffles are cool, prepare the sandwiches as directed.

Notes

  • To help the waffles hold their shape, you can freeze the waffles before adding ice cream.
  • There is no need to thaw frozen waffles.
  • Bring the ice cream to room temperature to make it easier to spread.
  • Cook your homemade waffles ahead of time and store them in the fridge or freezer until ready to use.
  • Use an offset spatula to spread the softened ice cream on the waffles.
