Crockpot Lava Cake

This decadent chocolate cake is easy and fun to make in your slow cooker.

Ingredients

For the cake

  • 15.25 ounces (432g) Chocolate Cake Mix one box
  • 1 1/4 cup (296ml) water
  • 1/2 cup (118ml) oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon instant coffee granules

For the topping

  • 3.4 ounces (111g) instant chocolate pudding and pie filling mix one box
  • 2 cups (250ml) milk
  • 12 ounces (240g) milk or semi-sweet chocolate chips one bag

Instructions

  • Spray a crockpot with cooking spray.
  • In a bowl, use a hand mixer or whisk to mix together cake mix, water, oil, eggs, vanilla and coffee granules until well combined.
  • Add cake batter into crockpot.
  • In another bowl, whisk together milk and pudding mix until combined. Let stand for a few minutes before pouring it over the cake batter. Make sure to NOT mix in with cake batter.
  • Sprinkle the bag of chocolate chips on top of the pudding layer, and do not mix in.
  • Cover and cook on High for 2.75 - 3 hours, or until the top of the cake is puffed up and set. Timing will vary depending on the size and make of your slow cooker.
  • Once baked, remove cake and serve with a scoop of ice cream or whipped cream.

Notes

  • The coffee granules enhance the chocolate flavor but are not a must-have ingredient
  • Make sure that you don't mix the layers before baking. 
  • Watch the edges of the cake as it cooks, you want to make sure you don’t overbake the cake. 
  • If your slow cooker tends to burn desserts, try lining the insert with parchment paper and then spray with cooking spray.
  • I used Betty Crocker chocolate cake mix in this recipe.  
  • The cooking time for your cake may vary depending on the size, make and model of your slow cooker.
