Baked Apples With Pecan Streusel

- 5 apples
- 1 teaspoon apple cider vinegar
- ¼ cup (22.5g) rolled oats
- ¼ cup (32.5g) pecans coarsely chopped
- ¼ cup (50g) packed dark brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon allspice
- ¼ teaspoon salt
- ½ cup (120ml) apple juice
Preheat the oven to 375F / 190C / gas mark 5.
Add the apple cider vinegar to a large bowl of water. Cut apples in half and core, then add to the bowl to prevent them from going brown.
In a medium bowl, mix together the oats, pecans, brown sugar, spices and salt.
Remove apple from the vinegar water, pat dry and place them in a baking dish skin side down.
Sprinkle the oat streusel topping evenly all over the apples.
Pour the apple juice all over the apples.
Cover with alumnium foil and bake for 30 minutes. Uncover and bake for a further 15-20 minutes until the apples are tender and the toppings are brown.
Remove and serve with toppings of your choice.
- Use firm, crisp apples as they will hold up best.
