Ingredients

  • 5 apples
  • 1 teaspoon apple cider vinegar
  • ¼ cup (22.5g) rolled oats
  • ¼ cup (32.5g) pecans coarsely chopped
  • ¼ cup (50g) packed dark brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon allspice
  • ¼ teaspoon salt
  • ½ cup (120ml) apple juice

Instructions

  • Preheat the oven to 375F / 190C / gas mark 5.
  • Add the apple cider vinegar to a large bowl of water. Cut apples in half and core, then add to the bowl to prevent them from going brown.
  • In a medium bowl, mix together the oats, pecans, brown sugar, spices and salt.
  • Remove apple from the vinegar water, pat dry and place them in a baking dish skin side down.
  • Sprinkle the oat streusel topping evenly all over the apples.
  • Pour the apple juice all over the apples.
  • Cover with alumnium foil and bake for 30 minutes. Uncover and bake for a further 15-20 minutes until the apples are tender and the toppings are brown.
  • Remove and serve with toppings of your choice.

Notes

  • Use firm, crisp apples as they will hold up best.
  • Please remember to make sure the oats are gluten free (if you are following a gluten-free diet).
  • There are 5 Blue Plan SmartPoints in a serving of this.
