Slow Cooker African Peanut Stew

This Slow Cooker African Peanut Soup (Granat Stew, Groundnut Stew, Senegalese Maafe) is so, so easy to make. Especially useful to know when you are about to have a craaaaaaaaazy day or two.

WHY MAKE THIS RECIPE

I love making groundnut stew – as it is easy to make, most folks always have the ingredients to hand, it is nourishing, creamy, nutty and oh so finger licking good.

INGREDIENTS

Peanut stew sauce Water Tomatoes Peanut butter Tomato puree Ginger Garlic Scotch bonnet Coriander

Step 1

Add 1 tbsp. of olive oil to a frying pan over medium heat and brown the meat on all sides in batches. Add the browned meat into the slow cooker.

Step 2

Add the remaining 1 tbsp. of oil to the frying pan and add the onion and peppers and cook for 5 mins until the onions are softened. Add the onion and pepper mix into the slow cooker.

Step 3

Stir in the peanut butter sauce, mix well and cook on high for 4 hours.

Step 4

Check after 4 hrs., and if you need a little more time then cook for a further hr. Adjust seasoning then serve with some rice.
