Tomato Feta Salad

A fresh summer salad loaded with tomatoes, peaches and strawberries.

Ingredients

  • 2 cups (60g) baby spinach
  • ½ pound (250g) cherry tomatoes halved
  • 5 peaches washed and quartered
  • ½ pound (250g) strawberries quartered
  • ½ cup (75g) crumbled feta
  • 2 tablespoons fresh chopped parsley
  • 1 teaspoon sunflower seeds

Honey Mustard Dressing

  • 2 tablespoons olive oil
  • 1 teaspoon mustard
  • 1 tablespoon honey
  • 1 teaspoon garlic
  • 1 tablespoon lemon juice

Instructions

  • In a large salad bowl, combine the spinach, cherry tomatoes, peaches, strawberries, feta, parsley and sunflower seeds.
  • In a small bowl, mix oil, mustard, honey, garlic and lemon juice to make the dressing.
  • Pour the dressing over the salad and toss until the salad is well coated.
  • Serve.

Notes

  • Use fresh, ripe fruit for the best flavor.
  • Don’t cut the fruit too small, or it will turn mushy. 
  • You can peel the peaches or leave the skin on. The choice is a personal preference. 
  • If prepping ahead, store the salad dressing separately and mix just before serving. 
  • Serve larger portions for a full meal or serve smaller portions as a side.
  • Storage - keep the undressed salad in an airtight container inside the fridge for several days. Store the dressing in a separate container for up to a week.
