In a large salad bowl, combine the spinach, cherry tomatoes, peaches, strawberries, feta, parsley and sunflower seeds.
In a small bowl, mix oil, mustard, honey, garlic and lemon juice to make the dressing.
Pour the dressing over the salad and toss until the salad is well coated.
Serve.
Notes
Use fresh, ripe fruit for the best flavor.
Don’t cut the fruit too small, or it will turn mushy.
You can peel the peaches or leave the skin on. The choice is a personal preference.
If prepping ahead, store the salad dressing separately and mix just before serving.
Serve larger portions for a full meal or serve smaller portions as a side.
Storage - keep the undressed salad in an airtight container inside the fridge for several days. Store the dressing in a separate container for up to a week.
