Air Fryer Pot Roast

Ingredients

  • 2 tablespoons olive oil divided
  • ½ cup (125ml) red wine divided
  • ½ cup (125ml) beef stock divided
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh parsley chopped
  • 2 bay leaves
  • 1 teaspoon minced garlic
  • 2 tablespoons cranberry jelly divided
  • 3 pounds round roast beef boneless
  • 1 ½ cup (200g) carrots chopped
  • 1 ½ cup (200g) potato peeled, quartered and halved
  • 1 large red onion quartered
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  • Preheat the Air Fryer to 350 degrees F / 180 degrees C.
  • Combine the oil, wine, beef stock, rosemary, parsley, bay leaves, garlic, cranberry jelly, salt and pepper in a small bowl.
  • In a bowl or ziplock bag combine the beef roast and half of the marinade. Marinade at room temperature for 30 minutes.
  • Select a baking dish or cake tin that will fit inside your air fryer and add the vegetables along with the remaining half of the marinade. Place in the air fryer to roast for 30 minutes.
  • Remove the air fryer basket and add the beef on top of the vegetables. Roast until the meat reaches your desired level of doneness.
  • Garnish vegetables and beef with parsley. Serve with the cooking juices.

Notes

    • Opt for a well-marbled, boneless roast beef like round roast, chuck roast, or brisket. These cuts are more forgiving and become tender and flavorful when slow-cooked.
    • Allow the roast beef to come to room temperature before cooking. This helps it cook more evenly and reduces the risk of overcooking the outer layers.
    • If desired, sear the roast in a hot skillet with a bit of olive oil before air frying. Searing caramelizes the meat's surface, enhancing its flavor and creating a delicious crust.
    • To achieve the perfect level of doneness, use a meat thermometer to check the internal temperature. Consult the chart above for doneness levels, and adjust the cooking time to suit your preference.
    • After cooking, let the pot roast rest for at least 10-15 minutes under a foil tent. This allows the juices to redistribute, keeping the meat moist and tender.
    • If the sauce is too greasy, skim off excess fat using a fat separator or a spoon.
    • Feel free to customize the vegetable mix based on your preferences. You can add celery, parsnips, or even mushrooms for additional variety.
    • The pan juices make a delicious gravy. Simply strain the liquid, mix it with a bit of flour or cornstarch, and cook until thickened for a flavorful sauce.
    • This dish can be prepared ahead of time and reheated. In fact, it often tastes even better the next day as the flavors continue to meld.
