Crockpot Sweet Potatoes

Crockpot sweet potatoes are an incredibly easy side or main dish.

Ingredients

  • 5 large sweet potatoes unpeeled
  • butter optional and to taste (dairy or vegan)

Instructions

  • Clean and scrub the sweet potatoes but don't dry them. The moisture will help cook them.
  • Add sweet potatoes in a single layer in the crockpot. If needed, stack one more layer on top.
  • Cover and cook on the high setting for 3 1/2-4 hours, or low heat for 6-7 hours until they are fork tender.
  • Remove the lid, season to taste, then serve and enjoy!

Notes

    • Cook the slow cooker sweet potatoes potatoes in a single layer. If you need to stack another layer on top. But don't do more than two layers.
    • You don't need to poke holes in the veggies. They will cook as they are without the need for steam release.
    • If possible try and cook similar sized potatoes together they cook evenly and at the same rate.
    • Avoid opening the slow cooker too much during cooking, as this will bring down the temperature and result in a longer cook time.
