Ingredients

  • 4 cups (57g) mixed lettuce leaves torn into bite-sized pieces
  • 2 cups (40g) arugula leaves
  • 1 cup (150g) cucumber sliced
  • ½ cup (60g) radish thinly sliced
  • ¼ cup (25g) red onion thinly sliced
  • ¼ cup (45g) pitted olives halved
  • 2 tablespoons sunflower seeds

Ingredients for Salad Dressing:

  • 7 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 pinch sugar
  • salt and pepper to taste

Instructions

  • In a large salad bowl, combine the mixed lettuce leaves and arugula, cucumber, radish, red onion, olives, and sunflower seeds to the bowl.
  • In a small bowl, combine the extra virgin olive oil, balsamic vinegar, apple cider vinegar, Dijon mustard, pinch of sugar, salt, and pepper.
  • Whisk the ingredients together until well combined and emulsified.
  • Taste the dressing and adjust the seasoning according to your preference. You can add more vinegar for tanginess, more mustard for flavor, or more salt and pepper for seasoning.
  • Drizzle the dressing over the tossed salad just before serving.
  • Toss the salad gently to ensure that the dressing coats all the ingredients evenly.
