Instructions
In a mixing bowl, combine the cooked and shredded chicken, softened cream cheese, salt and hot sauce. Mix well until all the ingredients are evenly combined.
Lay out one corn tortilla on a clean surface and spread a thin layer of the chicken mixture evenly over the tortilla, leaving a small border around the edges. Spread chives, scallions or green onions over the chicken mixture.
Carefully roll up the tortilla tightly, starting from one end. Repeat this process with the remaining tortillas and chicken mixture.
Once all the tortillas are rolled, you can slice them into pinwheels. Use a sharp knife and cut each rolled tortilla into 1-inch thick slices.
Place the chicken pinwheels on a serving platter and serve immediately. You can also refrigerate them for a couple of hours to allow them to firm up before serving.
