Buffalo Chicken Pinwheels

Ingredients

  • 2 cups (366g) chicken cooked and shredded
  • 4 ounces (113g) cream cheese softened
  • 2 tablespoons chopped chives scallions or green onions
  • 3 tablespoons hot sauce adjust amount according to your preference
  • 6 small corn tortillas

Instructions

  • In a mixing bowl, combine the cooked and shredded chicken, softened cream cheese, salt and hot sauce. Mix well until all the ingredients are evenly combined.
  • Lay out one corn tortilla on a clean surface and spread a thin layer of the chicken mixture evenly over the tortilla, leaving a small border around the edges. Spread chives, scallions or green onions over the chicken mixture.
  • Carefully roll up the tortilla tightly, starting from one end. Repeat this process with the remaining tortillas and chicken mixture.
  • Once all the tortillas are rolled, you can slice them into pinwheels. Use a sharp knife and cut each rolled tortilla into 1-inch thick slices.
  • Place the chicken pinwheels on a serving platter and serve immediately. You can also refrigerate them for a couple of hours to allow them to firm up before serving.

Notes

  • Warm the corn tortillas slightly to make them more pliable and prevent cracking. Wrap them in a damp paper towel and microwave for about 20-30 seconds.
  • Customize the buffalo chicken pinwheel recipe by adding your favorite ingredients like diced bell peppers, shredded cheese, or chopped jalapenos for extra flavor and texture.
  • If you prefer a milder version, reduce the amount of hot sauce or omit it completely.
  • Use flour tortillas instead of corn tortillas if you prefer.
  • Ensure that the cream cheese is softened to make it easier to mix with the other ingredients.
  • If desired, you can refrigerate the rolled tortillas for about 1-2 hours to allow them to firm up before slicing. This step is optional but can help the pinwheels hold their shape better.
  • For clean and neat pinwheel slices, use a sharp knife and apply gentle pressure while cutting through the rolled tortillas.
  • Add your favorite dipping sauce, such as ranch dressing, salsa, or guacamole on the side.
