Baked Pancake With Maple Bacon, Walnut And Cranberries

Christmas breakfast idea : baked pancake with maple bacon, walnuts and cranberries.

  • 70 g (2.5oz) plain flour
  • 120 ml (0.5 cup) milk
  • 3 eggs
  • A pinch of salt
  • 0.5 tsp olive oil
  • 5 slices of bacon I used spoiltpig bacon, diced
  • 4 tbsp chopped walnuts
  • 3 tbsp Honey
  • 3 tbsp cranberries
  • 1 tsp orange zest


  • Preheat oven to fan-assisted 190C / 210C / 425F / gas 7.
  • Add the flour, milk, eggs and salt into a bowl and whiz with a hand mixer into a batter
  • Transfer the batter into an oiled skillet and bake for 20 mins until the pancake is golden and puffed.
  • Make the maple bacon with walnuts and cranberries:
  • Heat the olive oil in a frying pan and cook the bacon until done.
  • Add in the chopped walnuts, honey, cranberries and orange zest and cook for 15 secs.
  • Slice the pancake into portions and top each portion with the maple bacon, walnut and cranberry mix, and serve.
