Grilled Salmon With a Tropical Salsa

Ingredients

  • 1 tbsp reduced salt soy sauce
  • 2 tsp olive oil
  • 2 salmon fillets

For the Tropical Salsa

  • 300 g (10.5oz) mango chunks diced
  • 300 g (10.5oz) pineapple chunks diced
  • Lime juice to taste
  • 2 tbsp chopped red onion
  • 2 tbsp chopped coriander
  • 2 tbsp mild chopped chilli
  • Salt

Instructions

  • Mix together the soy sauce and olive oil in a bowl and marinate the salmon fillets for 10 minutes.
  • Preheat the grill to medium and grill the salmon for up to 10 minutes (depending on the thickness of the fillets) until the fish starts to flake when tested with a fork.
  • Make the tropical salsa by mixing together all the ingredients in a bowl.
  • Serve the grilled salmon fillets with the salsa on the side.
