Goodbye to winter slaw

This crunchy red cabbage, celeriac and apple slaw is healthy and delicious with a yoghurt, lemon and sweet chutney dressing.

Ingredients

  • 300 mls natural yoghurt
  • 2.5 tbsp lemon juice
  • 3 tbsp Pataks Brinjal pickle or a sweet mango chutney
  • 1 tsp olive oil optional
  • 2 large carrots
  • ½ small red cabbage about 350g roughly chopped
  • 2 small spring onions
  • 1 apple
  • 1/3 small celeriac celery root, about 300g

Instructions

  • First prepare the dressing by adding all the ingredients in bowl and mixing until well combined.
  • Prepare the vegetables by grating the carrots, chopping the cabbage and spring onion and julienne the apple and celeriac.
  • Add the vegetables in to a large bowl and add in half the dressing and mix.
  • Add the remaining dressing in a tbsp at a time and mix until it is right for you.
  • Serve immediately.

Notes

Make sure you peel and cut the celeriac last and just before you are ready to add in the dressing as it has a tendency to change colour.
