Instant Pot Mashed Sweet Potatoes
Instant Pot Mashed Sweet Potatoes are an easy to make side dish that is full of flavor!
- 2 lbs (907g) sweet potatoes peeled and cut into 2 inch cubes
- 1 cup (237 ml) water
- 1 tsp ground cinnamon
- 2 tbsp dairy free butter
- 2 tbsp maple syrup
- salt to taste
Wash, peel and quarter sweet potatoes. But, if you prefer you can skip peeling them.
Add 1 cup of water into the Instant Pot insert, making sure it does not pass the fill line.
Place the potatoes inside the insert, cover your Instant Pot and set the valve to the SEALING position.
Select the Pressure Cook or Manual button (dependent upon IP model), select high pressure and set the timer to 14 minutes.
Cook till done, then perform a complete quick pressure release.
Carefully open the lid and remove the sweet potatoes from the Instant Pot. Make sure to drain off the cooking water.
Place sweet potatoes in a large bowl and add the rest of the ingredients before mashing.
Serve your Instant Pot Mashed Sweet Potatoes warm.
