Bacon and Chicken Skewers With Basil Chimichurri {Video}

Chicken Bacon Skewers

  • 2 chicken breasts diced
  • 6 slices smoked streaky spoiltpig bacon
  • 6 wooden skewers soaked in water for 15 mins
  • Olive oil to brush
  • Salt

Basil Chimichurri Sauce

  • 30 g (1oz) basil
  • 30 g (1oz) flat leaf parsley chopped
  • 30 g (1oz) red onion roughly chopped
  • 1 garlic clove roughly chopped
  • 125 ml (1/2 cup) olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 2 tsp dried oregano
  • 1/2 tsp salt


  • Make the basil chimichurri sauce add all the ingredients into the food processor and whiz into a saucy consistency.
  • Taste and add more vinegar or salt as necessary and set aside.
  • Thread the chicken cubes unto the skewers weaving the bacon slices between each cube. Continue until all the skewers are full and brush with oil and season.
  • Cook the chicken bacon skewers on the barbecue for approximately 10 minutes, turning regularly, or until they are cooked through.
  • Serve the chicken and bacon skewers, with the basil chimichurri sauce and plenty of grilled vegetables.
