Baked Pancake With Maple Bacon, Walnut And Cranberries
Christmas breakfast idea : baked pancake with maple bacon, walnuts and cranberries.

- 70 g (2.5oz) plain flour
- 120 ml (0.5 cup) milk
- 3 eggs
- A pinch of salt
- 0.5 tsp olive oil
- 5 slices of bacon I used spoiltpig bacon, diced
- 4 tbsp chopped walnuts
- 3 tbsp Honey
- 3 tbsp cranberries
- 1 tsp orange zest
Preheat oven to fan-assisted 190C / 210C / 425F / gas 7.
Add the flour, milk, eggs and salt into a bowl and whiz with a hand mixer into a batter
Transfer the batter into an oiled skillet and bake for 20 mins until the pancake is golden and puffed.
Make the maple bacon with walnuts and cranberries:
Heat the olive oil in a frying pan and cook the bacon until done.
Add in the chopped walnuts, honey, cranberries and orange zest and cook for 15 secs.
Slice the pancake into portions and top each portion with the maple bacon, walnut and cranberry mix, and serve.
