*Preheat 1 tbsp oil in a frying pan over medium heat and brown the chicken on both sides for about 2 to 4 mins. Transfer the chicken into your slow cooker.
Add the onion, spring onion, jerk seasoning paste, orange juice and soy sauce into a high-powered blender and blend into a smooth paste, before pouring the paste over your chicken and add in the thyme.
Cover the slow cooker and cook on high for 3.5-4 hours until the chicken is cooked through, adjust seasoning before switching off the heat.
Serve the jerk chicken stew with some rice and peas or some warm roti and enjoy.
Notes
*You can skip the chicken browning bit and just put the chicken straight into the slow cooker if you want. If slow cooking on low then cook for 7-8 hours.
