Instant Pot Chia Strawberry Jam

This fruity jam comes together in just minutes and with only 5 simple ingredients.

Ingredients

  • 2 2/3 lb (1209g) strawberries hulled and quartered
  • 1/3 pound (151g) peaches peeled and chopped
  • 3 tablespoons maple syrup or more, to taste
  • 1 tablespoon lemon juice
  • 3 tablespoons chia seeds

Instructions

  • Combine the strawberries, peaches, maple syrup, and lemon juice inside the Instant Pot insert.
  • Cover the Instant Pot, turn the valve to the sealing (not venting) position.
  • Set to pressure cook/manual pressure on high pressure for 1 minute.
  • When done, allow for a natural pressure release.
  • Open, let cool slightly, and then mash the fruit to your desired consistency.
  • Select the sauté function and mix in the chia seeds.
  • Bring the jam to the boil and cook, making sure to stir occasionally for 5-10 minutes, or until it reaches your desired thickness.
  • Switch off the heat, transfer to a prepared jam jar.

Notes

  • Allow the jam to cool down sufficiently before mashing.
  • Add more maple syrup if your fruit is tart.
  • Feel free to swap more of the berries in for the peaches.
  • This refrigerator Jam can be made with other berries too; raspberries, blueberries, and blackberries are all great choices.
