Sausage Okra Sandwich – Sierra Leone Flavours
Inspired by Sierra Leone flavours, this Sausage Okra Sandwich is a lovely picnic and lunchbox idea (or anytime you want a really good sandwich).
I like sausages – lots. They are good hot, cold, good to feed a crowd and are a handy pantry staple for feeding ravenous children.
I like okra – lots. It is good in a salad, grilled with other vegetables, or in the stewed okra recipes we have in Sierra Leone. (If you like okra lots too, try my Crispy Roasted Okra and my Sausage Okra Fried Rice recipes.)
And I like okra even more as it leads me to meet Ozoz who blogs at Kitchen Butterfly through Instagram. I had been looking for okra pictures and recipes and I came across great African fusion recipes on her blog. I knew I had to get to know this person. And when she posted her okra and sausage sandwich recipe, I stopped everything and tried it there and then.
The important thing is to make sure you choose the slightly smaller (tender) okra pieces and cut them into approximately the same size as the chipolata sausages. I have kept this very simple and served it in a sandwich along with mayonnaise and sweet chilli sauce but you can add sauces to your taste.
This Sausage Okra Sandwich is easy, different and tastes really good, what more do you want? It is a perfect picnic and lunch box idea. Imagine opening up your work lunch after eating a cheese and pickle sandwich for the fourth day running – and taking a big old bite of this. Oh yeah.

Sausage Okra Sandwich - Sierra Leone Flavours
Ingredients
- 1 tsp veg oil
- 4 thin sausages chipolata sliced into discs
- 100 g okra sliced into discs
- 2 spring onions scallions sliced
- Salt
- Chilli flakes
- 2 bread rolls
Instructions
- Heat the oil in the frying pan.
- Fry the sausages for about 4 mins or until half done.
- Add in okra and spring onions and fry for about 3 mins stirring a few times whilst frying.
- When the okra is cooked through season the mixture with salt and chilli.
- Slather some mayonnaise and sweet chilli sauce into your bread rolls and stuff them full of the okra sausage mix.

I have only ever used okra in gumbo and curry, so will definitely enjoy trying this!

I’ve heard of okra but I’ve never tried it, I’m not even sure what it really looks like!
A lot of major supermarkets in London and in the big cities seem to stock okra. So keep an eye out when you go shopping.
I saw okra growing in Alabama this summer – what an amazing and versatile vegetable.

I’ve never actually tried okra before, everytime I pop over I always learn about new ingredients love it !!
Now that’s a combination I would never have thought of! I’ve always been a bit put off by the texture of okra, but always open to try again.
Janice if you dry fry it or roast it its texture is different from what you think.
I haven’t had okra since I spent some summers on a farm in Minnesota, USA as a kid. They had it all of the time. Now, adding sausage to it and you have one dynamite sandwich no doubt! Sounds yummy, Bintu 🙂

I am really not sure how to describe it. Try roasting it where is turns out so crispy that you will not stop eating it.

I love okra! Only ever tasted it for the first time at my dad’s 50th birthday last year in a restaurant. lovely it was!
