Creamy Rocket and Watercress Soup in the Multicooker Redmond
This light, refreshing and creamy rocket and watercress soup was just the thing we needed after a week of over indulgence.
Especially a week which involved a fab five course fortieth birthday party (where I met the coolest jazz musician in town), a three course supper with a whole load of cheese, testing about three different doughnut recipes (oh yeah), and a girly catch up that involved five different types of cake. Cue lots of very long walks to burn off the calories, trampoline jumps and endless bowls of healthy soups like this one.
This soup with a simple base of onion, potato, rocket and watercress is very easy to make in my Multicooker Redmond. But don’t be fooled by the small list of ingredients. It packs a huge punch in terms of flavour. Plus watercress is a super food with lots of anti-oxidants, vitamins, iron, calcium and fibre. This is a soup you want to have in your life.

Actually, I’m finding it better to use the multicooker for this kind of thing than a slow cooker – with this multicooker you can do everything in one pot, much easier! Creamy Rocket and Watercress Soup in the Multicooker Redmond
Ingredients
- 1 tbsp olive oil
- 1 large onion finely chopped
- 1 large potato (200g) cut into very small cubes
- 2 garlic cloves minced
- 1 litre (4 cups) hot vegetable stock (or chicken stock if not vegan)
- Salt
- 50 ml double cream or dairy free milk (if vegan)
Instructions
- Add the olive oil and onion to the Multicooker Redmond and set it to fry for 15 mins with the lid open.
- Soften the onions for 8 mins before adding in the potato and garlic and frying for the rest of the time stirring occasionally.
- When the fry programme finishes, set the Multicooker to boil for 15 min, add in the hot stock, watercress and rocket and close the lid and cook until the programme finishes.
- Transfer the soup into a bowl and allow to cool, then whiz with a hand held blender and add in salt and cream before serving.

We got a multicooker last year and I can’t recommend one enough. Like Bintu has said, they end up replacing a lot of your existing gadgets in your kitchen!

This looks great. I love soups but some soups can be quite wintery and this one sounds like a perfect soup for spring and summer, the rocket and watercress I can only imagine make it taste really fresh. x

I have been looking at slow cookers, but after reading here about multi cookers (mostly the bit about only needing one pot!) I think it may be a better investment for what I need! I love the sound of your soup, sweet watercress with peppery rocket – delicious!
