Strawberry Blueberry Cake is a perfect taste of summer! The patriotic red, white and blue colors make it great for serving up at your 4th of July celebration too.
Folks, I got a whole load of cake recipes that I really really really want to share. I keep working up ideas, then go through the very hard job of testing them out a couple of times, photographing them and meaning to write them up.
Then the next idea hits and I don’t get round to publishing the previous cake. So I am determined to clear up my huuuuge cake backlog starting with this beautiful strawberry blueberry cake.
Perfect really as in summer is almost here, which means we will be inundated with berries here, there and everywhere. One of my favourite ways of making this berry cake is with fresh strawberries and blueberries. I can also see it working quite well with the sharpness of raspberries or with all those juicy blackberries covering the hedges come autumn.
Friends, this light and fluffy sponge cake is sooooo ideal for serving up during the summer months. Simply with a topping of whipped cream and a generous portion of fruit decoration on top. So. Much. Yum. Plus the patriotic red white and blue colors make this fresh fruit cake the ideal dessert for your 4th of July celebration.

How To Make Strawberry Blueberry Cake
Strawberry and Blueberry Cake Ingredients
- Butter
- Caster Sugar
- Eggs
- Vanilla Extract
- Self-raising Flour
- Baking Powder
- Salt
- Strawberries
- Blueberries
- Whipping Cream
- Icing Sugar
Strawberry Blueberry Cake Instructions
- Preheat oven to 350 F / 180 C / Gas 4.
- In a large bowl, beat together the butter and sugar using an electric whisk until light and fluffy, then beat in the eggs a little bit at a time.
- Then mix in the flour, vanilla, baking powder and salt before folding in the strawberries and blueberries.
- Divide the strawberry blueberry cake batter between the two cake pans and gently level with a spatula. Bake for 30-35 minutes until a skewer comes out clean.
- Allow the strawberry and blueberry cake to stand for 5 minutes before turning them on to a wire rack to cool.
- Make the whipped cream by mixing the cream and together in a large bowl and whipping till the cream forms soft peaks.
- Then transfer one cake onto the serving tray, and spread half of the whipped cream on top.
- Place the second cake on top and cover with the remaining whipped cream.
- Decorate your strawberry blueberry cake with extra berries before serving.

- Make sure to cut the strawberries in small pieces to avoid having soggy berry lumps in the cake.
- You can swap in other fresh berries like raspberries and blackberries.
- If you prefer, feel free to use buttercream icing instead of whipped cream.
- You can bake this fresh fruit cake ahead of time and store, but don’t add the whipped cream until you’re ready to serve.
How To Decorate Flag Cake?
It is easy to make a festive Fourth of July flag cake with this berry cake recipe. Simply use sliced strawberries and blueberries to create a flag pattern on top. A fun holiday activity that the kiddoes will love to help with!
Fresh Berry Cake Flavor Variations
- Love chocolate? Add a handful of chocolate chips to the batter and then sprinkle some on top.
- You can mix some different berries right into the cake batter to get a whole load of berry goodness in every bite.

Ooops, thanks for pointing that out. Yes I used equal quantities of blueberries and starwberries and I have not updated this. However you can use whatever berries you have to hand.
